  • 2.75 kg (6 lb) sugar


Instructions


  1. In a large preserving pan, place the blackberries with half of the water. Heat gently until the blackberries soften and release their juices, which should take about 10 to 15 minutes.


  2. In a separate pot, cook the sliced apples with the remaining water until they become tender, usually around 15 minutes.


  3. Combine the cooked blackberries and apples. If you prefer a smoother jam, sieve the blackberries and blend the puree with the apples.


  4. Add the sugar, stirring until fully dissolved. This could take about 5 minutes.


  5. Bring the mixture to a rapid boil, and keep boiling until it reaches the setting point, which is around 105°C (221°F). This usually takes about 15 to 20 minutes.


  6. Once ready, pour the jam into sterilized jars, seal them tightly, and label for future enjoyment.


This traditional technique demands time and patience but rewards you with a lush, flavorful jam that highlights the natural sweetness of the fruits.

The Certo Way: Quick and Easy Blackberry Jam

  • 900 g blackberries

Instructions

  2. In a large saucepan, mix the crushed blackberries and sugar. Gently heat the mixture over low heat until the sugar dissolves, approximately 5 minutes.


  3. Once the sugar is dissolved, increase the heat and bring the mixture to a rapid boil, stirring constantly.


  4. Maintain the boil for 2 minutes, then take it off the heat.


  5. Stir in the Certo and return to a hard boil for 1 more minute.


  6. Remove from heat and allow the jam to sit for about 5 minutes, stirring often and skimming off any foam.


  7. Finally, pour the jam into jars, seal them, and label.


Using this method will yield about 2.26 kg (5 lbs) of jam, which is bright and flavorful and can be made in just 30 minutes.
